You'll Need

  • Boneless, skinless chicken thighs 4
  • Jollof Spice 2 tbsp
  • Oil 1 tbsp
  • Salt 1/2 tsp
  • Lemon or lime, juiced 1

Directions

  1. Season the chicken

    Pat the chicken dry with a paper towel. In a bowl, mix the Jollof Spice, oil, salt, and lemon juice. Rub this all over the chicken, coating both sides evenly.

  2. Let it marinate

    Cover and let the chicken sit for at least 15 minutes at room temp (or up to overnight in the fridge for deeper flavor). The longer it sits, the more the spice soaks in.

  3. Preheat the air fryer

    Set your air fryer to 380°F (193°C). Let it preheat for 3 minutes if your model doesn't do this automatically.

  4. Load the basket

    Place the chicken pieces in a single layer in the basket, leaving space between each piece so air can circulate. Don't overcrowd — cook in batches if needed.

  5. Cook

    Air fry for 10 minutes, then flip and cook for another 5–7 minutes, until golden and the internal temperature reads 165°F (74°C) at the thickest part. Boneless thighs cook fast, so check early rather than late.

  6. Rest and serve

    Remove the chicken and let it rest for 5 minutes before serving — this keeps the juices locked in. Slice or serve whole, ideally spooned over jollof rice.

Tips Boneless thighs cook fast and stay juicy — just don't overcook, since there's no bone to insulate the meat. Pat the chicken dry before seasoning for the best sear.
